Sencha is green tea made by steam fixing process. Quality features of Sencha: clean aroma, taste mellow and three green (dry tea green, soup green, tea leafs green). Japanese think this steaming Sencha as true color, true aroma, true taste natural flavor of tea. Quality of Sencha divided into three levels: Gyokuro, Bancha and Houjicha, Gyokuro is the best. Processes of Sencha include: steaming, rough rolling, rolling, drying and other processes. Steaming is the use of steam to destroy the activity of fresh leaves, form quality characteristics of dry tea color dark green, soup light green and tea leafs green jade.
